What to Do With All of Those Meat Deals

Nora did an amazing job this week (as usual) live on Houston Life talking about all of the great grocery deals out there. Check out the deals for Wednesday, July 26 to Tuesday, July 31, 2018! In case you missed her live, watch her on-air segment on Houston Life here! Most of you will be stocking up on meat, so instead of doing a full weekly menu this week, we thought you might enjoy some recipes using meat deals on sale at HEB!

Chicken for Roasted Chicken and Veggies

This one pan roasted chicken is easy and delicious!

Roasted Chicken and Veggies

  • Servings: 4

This chicken brings a flavorful taste of summer.

Ingredients

  • 4 bone-in chicken breasts (at HEB for $1/lb)
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 3 garlic cloves, minced
  • 2 teaspoons Italian Seasoning (or a mixture of dried basil, oregano, thyme)
  • 1/2 teaspoon red pepper flakes, optional for a little spiciness
  • 4 cups assorted vegetables like potatoes, onions, peppers, zucchini, green beans, brussel sprouts, etc., cut into uniform chunks

Directions

  1. Preheat oven to 400 degrees. Line a jellyroll or sheet pan with foil (for easier cleanup). Spray with cooking spray.
  2. Place chicken on the pan. Drizzle 1-2 Tablespoons of oil on the chicken and rub in. Season chicken with salt and pepper.
  3. Toss veggies in remaining oil and garlic, Italian Seasoning, and red pepper flakes. Arrange vegetables around the chicken. Spread any remaining oil and spice mixture on chicken.
  4. Bake for 35-45 minutes, or until chicken juices run clear and chicken reaches 160 degrees.
  5. Use leftover chicken and veggies to make fried rice for another meal!


 

Bone In Pork Loin Chops for Slow Cooker Ranch Pork

Need an easy and delicious slow-cooker supper? Try these ranch pork chops!

Slow Cooker Ranch Pork Chops

  • Servings: 4-6
  • Time: 5 minutes preparing, 4-8 hours cooking
  • Difficulty: easy
  • Print

A delicious set it, and forget it pork recipe with a creamy ranch sauce.

Ingredients

  • 4-6 Thick Cut Pork Loin Chops (at HEB for $2.59/lb)
  • 1 packet (3 Tablespoons) dry ranch seasoning
  • 1 oz. can Campbell’s Cream of Chicken and Herb condensed soup

Directions

  1. Place pork loin chops in the slow cooker.
  2. Pour cream of chicken and herb soup over pork. Sprinkle ranch seasoning over soup.
  3. Cook on low for 6-8 hours, or on high for 4-6.
  4. Serve with mashed potatoes and use the sauce as a gravy.


Ground Beef for Taco Pie

Add a twist to Taco Tuesday. Make a pie!

Taco Pie

  • Servings: 4-6
  • Time: 45 minutes
  • Difficulty: easy

Kick Taco Tuesday up a notch with this Easy Taco Pie!

Ingredients

    Pie 

  • 1 refrigerated pie crust
  • 1 lb ground beef (at HEB for $2.89/lb)
  • 1 small onion, diced
  • – 1 taco seasoning packet (at HEB get BOGO Free McCormick Taco seasoning)
  • 3/4 cup water
  • 4-6 ounces shredded cheddar cheese
  • Garnish
  • salsa
  • 1 cup shredded lettuce
  • 1 diced tomato
  • 1/4 cup sour cream or plain Greek yogurt

Directions

  1. Preheat the oven to 350 degrees. Place pie crust into pie pan. Bake for 8-10 minutes until it starts to brown.
  2. Cook ground beef and onions completely and drain well.
  3. Sprinkle taco seasoning over beef and add 3/4 cup water. Simmer 4-5 minutes until sauce has thickened.
  4. Put ground beef mixture into pie crust and top with shredded cheese.
  5. Bake for 15 minutes, or until crust is golden brown and cooked completely.
  6. Let cool for 5-10 minutes before serving.
  7. Garnish with salsa, lettuce, tomato, and sour cream/Greek yogurt
