Turkey Chili – Slow Cooker – Meal
My Cost $8.94 plus additional cost for toppings. I already had olive oil and spices.
Ingredients
1 pound ground Turkey, Ground Beef or Vegetarian option
1 teaspoons olive oil
3 garlic cloves, minced
1 yellow onion, chopped
1 bell pepper, chopped
3 teaspoons chili powder (mild)
2 teaspoons ground cumin
1 teaspoon dried oregano
1/4 teaspoon Cajun or cayenne pepper (optional)
1/2 teaspoon salt and Pepper
1 (28-ounce) can diced tomatoes (do not drain)
1 cup chicken broth
2 cans dark red kidney beans (drained, rinsed)
1 can sweet corn (drained, rinsed)
Toppings: cheese, sour cream, green onions
Instructions
1. Place oil in a large skillet over medium high heat. Add in onion and garlic sauté for 3-5 minutes. Add in ground turkey, ground beef or vegetarian option and break up the meat to the consistency you desire. Add additional seasonings to flavor meat. Cook ground turkey/beef to over 165 degrees Fahrenheit or until meat is no longer pink. Drain fat from the meat and transfer into the crock pot.
2. Add chopped bell pepper, chili powder, ground cumin, dried oregano, cayenne pepper, salt, large can of diced tomatoes (liquid and all), chicken broth, kidney beans and corn.
3.Cook for 4 – 6 hours on low
4. Adjust seasonings to taste by adding more if needed.
Top with cheese, sour cream or green onions.
Makes 4-6 servings, about 1 1/2 cups each
