Peanut Thai Stir Fry
Add Asian flair to leftover turkey.

Ingredients
- 1 Tbsp olive oil
- 1 tsp minced garlic
- 1/2 tsp minced/ground ginger
- 1 1/2 cups diced cooked turkey
- 1 package stir fry vegetables or leftover vegetables and/or shredded cabbage
- 3 or more Tbsp peanut butter
- 1/2 cup water
- 2 Tbsp soy sauce
- 1/4 tsp red pepper flakes
- cooked rice, cauliflower rice or noodles
- peanuts (optional garnish)
Directions
- Add olive oil to pan, and saute ginger and garlic on medium.
- Add remaining ingredients except rice/noodles and peanuts.
- Stir occasionally until sauce has thickened and vegetables are desired tenderness.
- Serve over noodles or rice.
- Top with peanuts.
