Turkey Broccoli and Cheese Stuffed Peppers

Hearty and colorful, these stuffed peppers will be a hit.

Ingredients
- 4 large bell peppers
- 1/2 cup of broccoli, finely chopped or frozen
- 1 1/2 cup cooked ground turkey/beef
- 1 1/2 cup (4 oz) shredded cheese, divided
- 1 cup cooked rice
- 1 clove minced garlic
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp red pepper flakes (optional)
- salt and pepper to taste
Directions
- Preheat oven to 350˚.
- Cut the tops off of the bell peppers and remove seeds.
- Mix the rest of the ingredients together in a bowl, reserving 1/2 c cheese.
- Pack each pepper with the mixture. Approximately 1 cup each
- Top with remaining shredded cheese.
- Bake 25-30 minutes on a baking dish or casserole until internal temperature reaches 165˚.
