Ready, Set, Aldi! Weekly Meal Plan

Aldi is the place to shop this week for some outstanding deals. Just remember to bring your own bags and a quarter for the cart. Check out the Aldi circular online for Wednesday, April 18 – Tuesday, April 24.

    • Monday – Pork Tenderloin ($1.89/lb) in the slow cooker (see recipe below). Save leftover Pork for Thursday’s nachos
    • Tuesday – Turkey Spaghetti (ground turkey $6.99 for 3 lbs, $1.09 Simply Nature Pasta, $1.65 Simply Nature Pasta Sauce, onions $.79 for a 2 lb bag)
    • Wednesday – Sirloin Steak with sauteed onions (Sirloin steak $5.79/lb and onions $.79 for a 2 lb bag)
    • Thursday –  Pork Nachos with leftover pork from Monday (onions $.79 for a 2 lb bag and diced tomatoes $1.29 for 24 oz)
    • Friday – Turkey Meatloaf (ground turkey $6.99 for 3 lbs and onions $.79 for a 2 lb bag) and Roasted Tomatoes ($1.29 for 24 oz)

Eat like a celebrity with Trisha Yearwood’s Pork Recipe!

Trisha Yearwood's Crock Pot Pork Loin

  • Servings: 6-8
  • Time: 5 hours 10 minutes
  • Difficulty: easy

A flavorful and tender pork roast with a delicious gravy.

Ingredients

  • 2 1/2 to 3 lb pork loin, trimmed of all visible fat
  • 1/2 tsp garlic powder
  • 1/4 tsp ground ginger
  • 1/8 tsp dried thyme
  • 1/4 tsp black pepper
  • 1 tbs vegetable oil
  • 2 cups chicken broth
  • 2 tbs lemon juice
  • 3 tsp soy sauce
  • 3 tbs cornstarch
  • salt and pepper, to taste

Directions

  1. Season the pork loin lightly with salt. In a small bowl combine the garlic powder, ginger, dried thyme, and black pepper. Rub the seasoning over the surface of the pork loin.
  2. In a skillet heat the oil and brown the pork loin on all sides. Transfer the pork to the crock pot. Combine the chicken broth, lemon juice, and soy sauce; pour over the pork loin.
  3. Cover and cook on low heat for 8 to 10 hours, or on high for 4 to 5.
  4. After cooking, transfer the roast to a platter and keep warm.
  5. To make the gravy, pour the liquid from the crock pot into a measuring cup. Skim off the fat. Measure two cups of the liquid, adding water if needed. Transfer to a sauce pan reserving 1/2 cup of the liquid.
  6. Stir the cornstarch into the reserved liquid, then stir into the liquid in the sauce pan. Heat, stirring frequently, until the gravy is thick. Taste and season with salt and pepper, if needed. Serve the roast with the gravy.

Pulled Pork Nachos

  • Servings: 4
  • Time: 35 minutes

Use leftover pork to create an easy and delicious platter of nachos.

Ingredients

  • Leftover shredded or chopped pork
  • Tortilla Chips
  • Shredded Cheese
  • Diced Onions
  • Diced Tomatoes
  • Salsa
  • Sour Cream
  • Cilantro

Directions

  1. Preheat the oven to 375 degrees F.
  2. Add a layer of tortilla chips on an oven-safe platter, top with onions, shredded cheese, and pulled pork.
  3. Bake until the cheese has melted.
  4. Top with diced tomatoes, salsa, sour cream and cilantro.
