Plan Meals and Save with BOGO at HEB
I have been consistently impressed with the deals at HEB. They have really good prices on quality items, and who doesn’t love to buy something and get free items?! Our menu this week uses items from their local Weekly Sales Ad running from Wednesday, July 4-Tuesday, July 10, 2018.

Tuesday
- Pesto Chicken (Hill Country Fare Split Boneless Skinless Chicken Breast with Rib Meat – $1.99/lb) Heat oven to 400 degrees. Spray sheet pan with oil. Put chicken on the sheet pan, and spread pesto sauce on the chicken. Bake 35 minutes or until 180 degrees. Top with sliced tomatoes (Greenhouse Tomatoes – $1.28/lb) and Parmesan. Broil for 1-2 minutes. See last week’s menu for a great pesto recipe!

Wednesday
- Breakfast Casserole-Make-Ahead Meal (HEB 16 oz. Breakfast Sausage -$1.99) Recipe Below

Borracho or Charro Beans, and 2 L 7-Up, Canada Dry or A&W FREE, with in-store coupon, for a savings of over $6!) Don’t forget to pick up fresh tortillas in the bakery!
- Chips & Queso (Buy HEB 32 oz. Easy Melt and get 9-13 oz. Mission Brown Bag Tortilla Chips and Red Gold 10 oz. Diced tomatoes FREE, with in-store coupon. SAVE up to $2.87!) Prepare this breakfast anytime casserole the night before for a quick meal!
Sausage & Egg Casserole
This chicken brings a flavorful taste of summer.
Ingredients
- 1 lb breakfast sausage
- 1/4 cup diced onions
- 1/4 cup diced peppers
- 1 cup spinach
- 4 slices of bread, cubed into bite-size pieces
- 12 eggs
- 1 cup sour cream or plain Greek yogurt
- 1 cup milk
- 1 teaspoon prepared mustard
- 1 1/4 cup shredded cheddar cheese
- salt and pepper to taste
Directions
- Cook and crumble breakfast sausage, onions, and peppers over medium heat. Add spinach, and cook until wilted. Drain grease. Set aside.
- Spray 9×13 baking dish with cooking spray, and spread bread cubes on the bottom of the baking dish.
- Place sausage veggie mixture on top of bread.
- In a large bowl, beat the eggs, sour cream/yogurt, milk, mustard, salt and pepper until smooth. Stir in shredded cheese.
- Pour egg mixture over bread and sausage mixture.
- Cover and refrigerate up to one day until ready to use.
- Remove from refrigerator and let stand for 20-30 minutes.
- Bake, uncovered, at 325 degrees for 35-45 minutes, or until a knife inserted in the middle of the baking dish comes out clean.
- Let stand 5 minutes before serving.
