Meal Plan Including Ways to Use Leftover Ham

Our menu this week uses leftover ham. Many of you will have this leftover from Easter. If not, Kroger has Spiral Sliced Ham for $.97/lb (check local ads as prices may vary). You can make it over the weekend and use the leftovers this week or cook it for a weekday meal and remove a day from our suggested menu. As with everything we share, customize it to your own tastes and needs!

Menu for the week:

  • Monday – Hawaiian Fried Rice using leftover ham from Easter, thick-cut ham from the deli, or shift the menu and make a ham, fresh pineapple ($.88 each), and yellow onions ($2.99 for 5lb bag).

  • Tuesday – Slow Cooker Lemon Garlic Chicken with roasted asparagus using Fresh Pilgrim’s Pride Boneless Chicken Breasts ($1.99/lb) [save leftover chicken for Thursday’s salad], lemons (2/$5 2lb bags), and Birds Eye Frozen Vegetables ($1.79 when you buy 6 items in the 6 for $3 sale).

  • Wednesday – Baked Ham Sliders and Roasted Asparagus using leftover ham or deli ham slices, King’s Hawaiian Rolls (2/$6), Kroger Cheese Slices (3/$5), and asparagus ($1.99/lb).

  • Thursday – Chicken Salad using leftover chicken from Tuesday’s Slow Cooker Lemon Garlic Chicken and Dole Salad Kits ($2.99 when you buy 6 items in the 6 for $3 sale [2 bags work well for a family of 4-5]).

  • Friday – Breakfast for Dinner with Mixed Fruit using Vital Farms Pasture-Raised Eggs ($4.99/dozen) [There are less expensive eggs, but these are healthier], Pillsbury Grands Biscuits ($1.49 when you buy 6 items in the 6 for $3 sale), Johnsonville Breakfast Sausage ($2.49 when you buy 6 items in the 6 for $3 sale), and Simply Potatoes ($1.99 when you buy 6 items in the 6 for $3 sale).

Take leftover ham to the next level!

Hawaiian Fried Rice

  • Servings: 4-6
  • Time: 30 minutes
  • Difficulty: easy

Forget takeout. This fried rice tops most restaurants.

Ingredients

  • 1½ cups- 2 cups chopped ham
  • 1 small white onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 Tablespoon Vegetable Oil
  • 3 eggs, lightly beaten
  • 3 cups cooked rice
  • 1 cup pineapple tidbits
  • 1 Tbs sesame oil
  • 2-3 Tablespoons soy sauce (more or less to taste)
  • 2 Tbsp chopped green onions (optional)

Directions

  1. Preheat a large skillet or wok to medium heat. Pour vegetable oil in the bottom. Add chopped ham, white onion, and red bell pepper and fry until tender.
  2. Slide the ham onion, and red bell pepper to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  3. Add the rice and pineapple to the veggie, ham and egg mixture. Pour the soy sauce and sesame oil on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

Slow Cooker Lemon Garlic Chicken

  • Servings: 4-6

Slow Cooker meals make the day seem so much more productive!

Ingredients

  • 1 teaspoon dried oregano
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 pounds (960 g) skinless and boneless chicken breast halves
  • 2 tablespoons unsalted butter
  • 1/4 cup (60 ml) water
  • 3 tablespoons freshly squeezed lemon juice
  • 2 garlic cloves, peeled and minced
  • 1 teaspoon chicken bouillon granules
  • 1 tablespoon minced fresh parsley

Directions

  1. In a small bowl, combine dried oregano, garlic, seasoned salt and black pepper. Mix well and rub chicken breasts with oregano mixture.
  2. Heat unsalted butter in a large nonstick skillet. Brown rubbed chicken breast halves in hot butter. Using a slotted spoon, transfer to slow cooker. (My Cuisinart Slow Cooker has the option to brown and sautee in the unit!)
  3. Pour water, lemon juice and bouillon granules in the same skillet. Bring to a boil over high heat, loosening browned bits from skillet. Pour boiled lemon mixture over chicken.
  4. Cover slow cooker and cook on low-heat setting for 4-5 hours. Add parsley and baste chicken. Cover slow cooker and cook on high-heat setting for a further 15-30 minutes, or until chicken breasts are tender.


Use leftover ham for a cheesy, meaty, delicious sandwich!

Hawaiian Roll Ham Sliders

  • Servings: 4-6
  • Time: 30 minutes
  • Difficulty: easy

Enjoy a quick dinner that can even be prepared the day before.

Ingredients

  • 2 pkg Hawaiian sweet dinner rolls (12 per package)
  • 16 oz leftover ham or deli sandwich ham
  • 12 slices Swiss cheese
  • 1/2 c butter, melted
  • 1 Tbsp poppy seeds
  • 1 1/2 tsp Worcestershire sauce
  • 1 1/2 tsp brown or Dijon mustard
  • 1 tsp onion powder

Directions

  1. Slice top from rolls and place bottoms in baking pan.
  2. Layer ham and cheese on rolls and place the tops of the buns on the sandwiches.
  3. Combine butter, poppy seeds, mustard, Worcestershire, and onion powder in a saucepan. Mix well.
  4. Drizzle over rolls. Refrigerate until butter is firm or overnight.
  5. Cover with foil. Bake at 350° for 30 minutes or until cheese melts.
  6. Uncover and cook for 2 additional minutes. Serve hot or cold.
