Easy Enchilada Casserole
My family loves Tex-Mex, and I created a quick and easy way to bring the taste of enchiladas to the table!
Easy Enchilada Casserole
An easy weeknight take on this Tex-Mex favorite.
Ingredients
- 1.5 lbs ground beef
- 1/2 onion, diced
- 2 teaspoons taco seasoning
- 3/4 cup water
- 1 can enchilada sauce (10 oz)
- 3/4 cup salsa
- 8 corn tortillas
- 2 cups shredded Mexican cheese blend
- Sour cream, cilantro, shredded lettuce, diced tomatoes, and sliced avocado for optional garnish
Directions
- Preheat oven to 350 degrees.
- Brown ground beef and sautee onions on medium until cooked. Drain any excess grease.
- Sprinkle taco seasoning onto ground beef. Pour water, enchilada sauce, and salsa over ground beef. Stir and bring to a boil.
- Simmer for 5-6 minutes until the sauce thickens.
- Cut the tortillas into 1″ pieces.
- Spray casserole dish with cooking spray. Layer half of the tortilla pieces on the bottom of the casserole dish. Place half of the ground beef mixture on top. Add 1 cup of shredded cheese. Repeat the layers of tortilla, ground beef, and cheese.
- Bake, uncovered for 10-12 minutes until cheese melts. Garnish with sour cream, lettuce, tomatoes, and avocado, if desired.
