How was the first week of our 2 Week Dinner Menu? Did you take the Printable Shopping List with you to the store or forget it on the counter like I often do? Were the kids complaining or asking for seconds? Did you pass out clean plate awards or have leftovers? Was there a recipe you loved or one that you did not like? We would love to have your feedback!
Please feel free to substitute items that your family will eat. This menu is designed for flexibility and to make life a little easier. If the kids are screaming that they want corndogs for dinner, just heat those up from the freezer. Having a harmonious family life is essential during this stressful time of quarantine.
Try to involve the kids in cooking dinner. At our house, if the kids are involved in cooking they are more likely to try the dinner, especially if it is something completely new to the family. It’s also a great life skill they will use forever!
Monday
Chicken Alfredo Pasta with Broccoli and Side Salad
- Cook two Chicken Breasts and dice up the meat.
- Add diced Chicken to the Alfredo Sauce and heat.
- Cook Linguini and drain.
- Add Chicken and Alfredo Sauce to drained Linguine.
- Top with Parmesan Cheese.
- Add a side Salad and Garlic Toast.
Turkey, Beef or Vegetarian
Tuesday
Taco Soup is a favorite at my house. Plus, I like it because it is Super Easy! A great option is to add a vegetarian meat to this soup, or just skip the meat all together since there are beans. If you want to try something different, try a Taco Pie!
Wednesday
Crock Pot Pork with Potatoes and Carrots
- Put the Pork in the Crock Pot. Brown all sides. I add a little oil to the Crock Pot, then turn when each side is seared.
- Add desired seasoning like salt and pepper.
- Pour 1/2 bottle of BBQ Sauce over Pork AND 1/2 cup Water or Broth.
- Wash and peel Potatoes (option: save 4 large potatoes for Sunday if desired) and Carrots. Coarsely chop an Onion. Chop Celery into one inch sections, if desired.
- Place Potatoes, Carrots, Onion, and optional Celery and a Bay Leaf in the Crock Pot with salt, pepper, and all-purpose seasoning.
- Cook on Low Heat for 6-8 hours.
